A riff on the Lean Greek made a few swaps, like red sauce for the olive oil, gyro beef for the chicken, sun dried tomatoes instead of fresh, on a regular thick crust, becoming another menu favorite.“ There’ s the Big Fat Greek Wedding,” Brian said with a laugh,“ so we have the Big Fat Greek Pizza.”
“ It’ s having fun with food and trying to have a sense of humor with how to come up with names,” Brian explained.“ That’ s how we’ ve created our specialty menu, and that’ s kind of what we’ re known for now. The thing is, people will have their favorite, and not want to try anything else. But when you get them to try the Flaming German, or the Big Fat Greek, or the Oriental Texas Tornado, then they don’ t want to try anything else!”
A recent addition to the menu, inspired by Brian’ s recent trip to the International Pizza Expo in Las Vegas, is cannolis – if, he said, people don’ t overeat on the pizza. Easier said than done.
But pizza in the Lintz family didn’ t start with Brian, but with his parents, Jim and Brenda. Longtime residents of Custer County may remember the South 60 Campground, started by Jim and Brenda, just in time for the 50th anniversary of the Sturgis Rally. Always entrepreneurial in nature and looking for creative ways to add some income, Jim Lintz and his friend Charlie Decker had decided to grow truck gardens one summer on their two places, and their incredible crops of produce were days away from harvesting when a hailstorm devastated both their gardens. Undeterred, Charlie, who lived in Oglala, turned his attention to coming up with the perfect pizza recipe, and spent a winter with a pizza oven and a trailer house, trying out his recipes on the local kids. He finally came up with a recipe he was satisfied with and brought some to Jim and Brenda’ s ranch, and had them try it.
“ It was phenomenal,” Brian remembers.“ Charlie got Dad started with a block pizza oven, and [ it became ] the South 60 Pizza and Campground. We did that until the 4- lane highway came through and went over the top of the pizza place.”
