Lamb Burger Stacks
Ingredients 1 pound ground lamb
Seasoning :*
• 2 tablespoons finely chopped rosemary
• 2 teaspoons coarse ground pepper
• 2 teaspoons coarse salt
• 2 cloves chopped garlic
• * Mix ingredients above then separate in halves .
Balsamic glaze :** 1 / 3 cup Balsamic Glaze thinned with the following :
• 1 tablespoon balsamic vinegar
• ½ cup fresh blueberries
• 1 teaspoon black pepper ** Mix above together and set aside
Optional : Avocado Goat Cheese
Directions Combine half of the seasoning with the lamb and form into 4 patties . Prepare to grill or broil . Chop 1 large sweet potato . ( We like to try different organic varieties . The photo shows a white sweet potato .) Add the other half of the seasoning . Line a cookie sheet with foil and add the sweet potato . Drizzle a little olive oil and toss to combine . Bake at 375 degrees for 25 minutes until golden , turning potatoes once . While burgers and potatoes are cooking , add the prepared balsamic glaze to a saucepan . Heat thoroughly , stirring gently and often .
Plate the sweet potato on a salad plate . Add burger with a quarter of an avocado and any additional green veggie you choose . Top with a generous spoon of blueberry blaze and a tablespoon goat cheese . Enjoy !
