Curry Chicken Salad
Both breasts from a large rotisserie chicken chopped
½ C fat free greek yogurt
¼ C olive oil mayo
1 Tbl agave nectar
1 C halved seedless red grapes
3 ribs of celery chopped
½ tsp black pepper
1 to 2 tablespoons Yellow Curry Powder
Mix all and enjoy with brown rice crackers, almond
crackers and fruit!
Feel free to increase the amount of curry if you like
more heat!

Harold and Miriam Moore
Miriam and Harold Moore, from Rockwall, Texas, have been married for 30 years, and have
four children and two grandsons. Harold, a
plumber by trade, enjoys making fabulous dinners for Miriam, playing guitar, wearing kilts,
fly fishing and craft beer. Miriam enjoys singing with Harold and quilt making. After Miriam
