Chicken & Veg Soup
Quick and easy Chicken and Veggie Soup, with a few secret ingredients by the kids...
30 mins (minimum)
2 x carrots
3 x sticks of celery
2 cups diced pumpkin or sweet potato
1 x large brown onion
1 x tin of corn
Breast meat off a BBQ chook
6 cups of stock (we used vegetable)
1/2 teaspoon minced ginger
2 x tablespoons soy sauce
1. Dice all the veggies, drain the corn, and
pull off the chicken and shred or dice
2. Fry off the celery and onion in the soup
pot for a few minutes, then add the
carrot, pumpkin/sweet potato, and stock.
3. Bring to the boil, then let bubble away for
about 30 minutes.
4. Add the chook, corn, ginger, and soy
sauce. Stir and heat through.
We left ours on low on the stove for another
30 minutes while we got ready for dinner
and baked some dinner rolls.
