on Drury Street, set to be unveiled in early 2025. The main restaurant will increase capacity from 120 to 200 diners, catering to growing local and international demand.
A key highlight of the expansion is the introduction of an entire private dining floor, featuring two new opulent dining suites. These spaces, designed for up to 12 and 40 guests respectively, will offer an exclusive and stylish setting for corporate events, family celebrations, and intimate weddings. The addition of a private bar and a dedicated entrance ensures an ultra-exclusive experience, ideal for SOLE’ s VIP and celebrity clientele.
Beyond guest-facing improvements, SOLE is also investing in its team, with a brand-new state-ofthe-art kitchen and upgraded staff facilities. These enhancements aim to create an inspiring and efficient work environment, reflecting the restaurant’ s commitment to its people and culture. With the expansion, staff numbers will increase from 55 to 75 employees, with recruitment beginning in early 2025.

Thornwood Construction has been appointed as the main contractor for the project, with O’ Keeffe Architects leading the architectural vision. Other key project partners include Garland as Assigned Certifiers, CORA Consulting Engineers, CEL M & E for mechanical and electrical engineering, H Shiels for electrical works, and Paragon for mechanical installations.
The expansion will necessitate temporary closures between January and March 2025 to complete construction.
With this ambitious expansion, SOLE Seafood and Grill is set to redefine luxury dining in Dublin, offering an even more sophisticated and memorable experience for its guests while reinforcing its status as a premier seafood destination in Ireland.
