Among the oldest buildings are the 13th century Governor’s Palace, and the Old Hospital, built in 1250, now home to the State Archives. Parma hosts one of only three remaining Renaissance theaters, the Teatro Farnese, constructed of wood in 1618. The later Teatro Regio, once home to native son, Toscanini, provides a highly critical operatic audi- ence. And Parma ham, which produces the famous prosciutto crudo, is from pigs fed the whey left over from Parmesan cheese production. The hams, aged for up to ten months, are cured in the nearby hills of Langhirino. As in all of Italy, one dines (and drinks) exceedingly well in Parma. Start packing.
