Apple Pie

• 1/2 stick butter
• 1 scant tsp. cinnamon
• 1 egg, well beaten
• 1 1/4 cup sugar
• 1 1/2 cup or more apples, chopped
• 1/4 tsp. salt
Melt butter. Mix cinnamon and salt with sugar
and add to melted butter and mix well. Add
well-beaten egg and apples, and blend well. Pour
into unbaked pie shell and bake at 350 degrees until
apples are tender.
Fried Apple Pies

• 1 quart sliced apples
• 3/4-1 cup sugar
• cinnamon, to taste
• 1 can biscuits
• 1/2 cup milk
Fry apples on medium heat until tender. Add
sugar and cinnamon to taste. Simmer for 10 minutes.
Place them in a bowl to cool. Sprinkle area
with flour; roll biscuit out. Place about 1 tablespoon
of apples in dough. Fold dough over and use a fork
to press and seal dough. Paint with milk. Fry in
about 1/8 inch of butter-flavored Crisco until brown.
Allow to cool. Top with dry powdered sugar or drizzle
powdered sugar icing.

Apple Salad

• 3 cups fresh diced apples
• 1 cup green seedless grapes, halved
• 1/2 cup celery, chopped
• 1/2 cup chopped California walnuts
• 1/3 cup mayonnaise-type salad dressing
• 2 tsp. lemon juice
Combine all ingredients. Chill and
serve on crisp lettuce.
7-Up Apple Cobbler

• 1 10-count can biscuits
3 large apples, peeled and sliced
• 2 tsp. cinnamon
• 3/4 cup sugar
• 1/4 cup margarine
• 1 (12 oz.) can 7-Up
Separate each biscuit into 2 layers.
Layer 9-inch square baking dish with
half the biscuits. Cover with apple slices;
sprinkle with 1 teaspoon cinnamon.
Layer with remaining biscuits; sprinkle
with remaining 1 teaspoon cinnamon.
Boil sugar, margarine and 7-Up in
a saucepan until sugar is dissolved. Pour
over biscuits and apples. Bake at 350
degrees for 40 minutes or until brown.
Yield: 8 servings.
Apple Nut Squares

• 3 eggs
• 1 3/4 cup sugar
• 1 1/2 c cup flour
• 1 Tbsp. vanilla
• 1 1/2 tsp. salt
• 3 tsp. baking powder
• 3 cups unpared apples, cubed
• 1 1/2 cup coarsely chopped walnuts
Grease and flour 13-by-9-inch pan.
Break 3 eggs into the bowl of an electric
mixer and beat the eggs until foamy.
Gradually add the sugar, continuing
to beat until the mixture is thick and
lemon colored. Mix flour, salt and baking
powder; blend into the sugar-egg
mixture. Fold in apples and walnuts and
transfer batter to the prepared baking
pan. Bake at 350 degrees for 30-40 minutes
or until a pick comes out clean. Cut
in squares. Serves 12-16. May be served
warm.
