INGREDIENTS :
• 1 1 / 2 cups whole wheat flour
• 1 / 2 cup oats ( old fashioned )
• 1 / 2 cup sugar ( or substitute )
• 1 tbsp baking powder
• 1 / 2 tsp baking soda
• 1 / 2 tsp salt
• 1 / 2 tsp cinnamon
• 1 cup greek yogurt
• 1 large egg
• 3 tbsp coconut oil
• 1 tsp vanilla
• 1 / 2 cup diced strawberries
• 1 / 2 cup blueberries
DIRECTIONS :
1 . Preheat the oven to 375 degrees and line the muffin tin with liners .
2 . Whisk together dry ingredients in a large bowl and set aside .
3 . In a medium bowl , whisk together yogurt , egg , melted coconut oil and vanilla . Slowly pour the wet ingredients into the dry ingredients and stir until just combined .
4 . Gently fold in berries to the batter . Divide batter evenly between 12 regular or 24 mini muffin tins .
5 . Bake for 20-25 minutes for regular size , 17-20 minutes for mini muffins , or until a toothpick comes out clean .
Fun Tip : Use cinnamon or cocoa powder for added flavor !
