1 . Whip up whipping cream in mixer until soft peaks begin to form .
2 . Fold in mascarpone .
3 . Mix in 1 / 8 cup coffee grinds . Then while mixing over low speed , slowly add about 1.5 cups of the confectioner ’ s sugar 1 / 2 cup at a time , being careful not to over-whip frosting .
The Assembly :
Put some frosting into a pastry bag and pipe onto the cupcake .

Make it Easier !

This cupcake would be great with any frosting ! If you don ’ t have time to make your own frosting , try a cream cheese or vanilla ! Add a little bit of whipping cream in your mixer to store bought frosting for a smoother pipe !
TIP : USE HOMEMADE OR STOREBOUGHT GINGERBREAD COOKIES AS A DECORATION !
