is one of my favorite people in
food today. His book Butter-
milk Graffiti offers a broader
view of American cuisine from
a Cambodian to Korean and
beyond. From its inception,
American cuisine has been con-
stantly moving and changing,
and Lee’s book truly captures
the fluidity of the subject.
