Soup Time!

This time of year, a warm bowl of soup is the perfect meal to help you warm up and get in all of your veggies. The options for soups are endless. In fact, you don’t even need a recipe with this simple formula from Utah State Extension:

Be as creative as you want. Each pot makes 4 servings.

Step 1: Choose a fat

•             2 tablespoons of oil (olive, vegetable, canola) or butter

Step 2: Add 1 Medium Chopped Onion

Step 3: Choose One or More Vegetables (1-3 cups, chopped)

•             Celery, green pepper, green beans, carrots, corn, peas,

zucchini, squash, mushrooms, cauliflower, broccoli,

cabbage… (fresh, frozen, or canned)

Step 4: Choose One Protein

•             1 pound of beef, chicken, ham, sausage, etc.

•             1 16 oz can of beans (pinto, black, kidney, white, chick peas, etc.)

•             1 cup of grated cheese

Step 5: Choose One Starch

•             3-4 cups diced potatoes

•             2 (16 oz) cans of beans

•             4 oz of egg noodles, macaroni, or pasta

•             ½ cup uncooked rice

Step 6: Choose a Broth (any combination to make 1-quart total)

•             Chicken, beef, vegetable broth

•             1 can of crushed or diced tomatoes and 3 cups of water

•             4 cups of any kind of milk

Step 7: Choose One or More Seasonings (measure with your heart)

•             Dried herbs (oregano, basil, cumin, chili powder, thyme, rosemary, parsley, etc.)

•             Bay leaf

•             Fresh Herbs

•             Minced Garlic

Directions

•             Heat fat in a large pot, and add onion until tender

•             Add remaining ingredients (except herbs)

•             Simmer until meat is cooked and vegetables/ starch are tender (20-30 minutes)

•             Add fresh herbs

•             Simmer for another 5 minutes

•             Serve!
