Strawberry Napoleon

1 ready-to-roll 23cm pie crust 125ml heavy cream 2 tbsp icing sugar ½ tsp vanilla extract 225g Driscoll ’ s Strawberries 2 tbsp semisweet chocolate chips
Preheat oven to 200 C / gas mark 6 . Unroll pie crust on a lightly floured surface . Cut out 6 hearts with a 10cm heart-shaped biscuit cutter ; place on ungreased baking sheet . Bake 12 to 14 minutes or until golden brown . Let cool .
Meanwhile , beat heavy cream , sugar and vanilla with an electric mixer until stiff peaks form . Melt chocolate chips in microwave . Cut a strawberry in half ; set aside . Hull remaining strawberries and cut into 0.5cm-thick slices .
Place 1 baked heart on a serving plate . Top with onesixth of the whipped cream and one-quarter of the sliced strawberries . Top with second heart and repeat . Top with third heart , one-sixth of the cream and a strawberry half . Drizzle with melted chocolate . Repeat procedure with remaining hearts , whipped cream , strawberries and chocolate . Serve immediately . Makes 2 servings .
Raspberry Coconut Crunch Smoothie Bowl

340g Driscoll ’ s Raspberries , divided 170g Greek yogurt 60ml honey 220g ripe banana , frozen 100g unsweetened shredded coconut , divided 60g English toffee bits 35g walnuts , chopped 25g almonds , sliced
Place 250g raspberries , yogurt , honey , banana and 80g coconut in a blender and blend on high speed until the mixture is smooth . Divide mixture evenly between two cereal bowls ( or coconut halves ).
Top each bowl with the remaining raspberries , remaining coconut , toffee bits , walnuts and almonds . Makes 2 servings .
Tip : For even more crunch and flavour , gently toast the coconut and almonds in a skillet before topping the smoothie bowls .
