EMULSIFYING SALTS FOR SLICE-ON-SLICE (SOS) with QUICK MELT
Inline Slice-on-Slice (SOS) for quick melt applications is possible, but the
cheese solid must be pumpable and firm. The texture should not be
brittle but an elastic texture. There are standard thicknesses and
weights depending on the cheese texture. SOS should not be sticky
because they are stacked in single stacks or groups of 2 to 6 and above
all they should have an easier melt. Sophisticated CORINO emulsifying
salts for SOS quick melt have been designed for trouble-free
production.

EMULSIFYING SALTS FOR INDIVIDUAL-WRAP-SLICE (IWS) with QUICK MELT
Individually-wrapped-slices (IWS) for quick melt applications is possible, the cheese solid must be pumpable and firm, the texture
should not be brittle but an elastic texture. There are standard thicknesses and weights depending on the cheese texture. Exact
sealing ensures the product to be securely wrapped and sealed. The IWS are easy to open and the cheese slice should not stick to the
PP foil. They are wrapped and accurately stacked in piles. Sophisticated CORINO emulsifying salts for IWS quick melt have been
designed for trouble-free production.
