10 MAIN MAIN 11 Dracula’s beetroot salad Ingredients: 400gr beetroot 100gr feta cheese 40gr roasted walnuts 50gr salad rocket Lemon rind from half a lemon Lemon juice from one lemon 1tbsp wine vinegar Olive oil (3-4tbsp) Salt and pepper A handful of chopped parsley One heaping tablespoon of ground horseradish Peal the beetroot and boil it in water with 1tbsp salt. When ready scoop it out of the water and cut it in cubes of 1-2cm each. Grind the lemon rind from half a lemon. Add the lemon juice from a whole lemon, the vinegar and at the end the extra virgin olive oil. Cut the feta cheese into cubes and add the chopped parsley and ground horseradish. Add more horseradish or less depending on how strong it is or according to your taste. Mix in the rocket salad and add salt and pepper to taste. Tip: Peal the beetroot raw, cut it into cubes and cook it in the steamer.
