Can You Feel the Love Tonight?
Appetizer: Blue Crab Dip
- 1 - 16 oz can lump crabmeat
- Salt and pepper
- 1 - 8 oz whipped cream cheese
- 1 lemon
- 1 small jar cocktail sauce
- 1 tsp horseradish sauce
- Sprig of parsley
- Your favorite cracker
Salad: Tomato & Cucumber
- 2 medium tomatoes
- thin, medium cucumbers

(Thin cucumbers have less seeds)
- ¼ small red onion
- Salt, pepper
- Garlic powder
- ¼ cup gorgonzola cheese
- 3 tbsp olive oil
- 2 tsp red wine vinegar
Rinse crab and check for shells. Place aside and allow to dry. Spread the cream
cheese evenly on the bottom of a 12” plate. Leave a ½-inch margin from the edge.
Season the crab with a pinch of salt and pepper. Break it apart slightly then
spread it evenly over the cream cheese. Slightly press the crab into the cheese.
Squeeze half of the lemon over the crab. Spread a layer of cocktail sauce over
the crab; it should be completely covered with cocktail sauce. Place a tablespoon
of horseradish in the middle of the plate and the sprig of parsley on top of the
horseradish for garnish. Cut the other half of the lemon into small wedges and
arrange around the plate. Refrigerate for 10-15 minutes. Serve with your favorite
cracker.
Cut tomatoes into small wedges and place in a salad bowl. Peel cucumbers, cut
them in half, long ways, then cut into small half-circles. Add to the tomatoes.
Cut red onion into thin slices and add to tomatoes. Season with salt, pepper,
garlic powder, and add gorgonzola cheese. Add olive oil & vinegar, mix, and taste.
Season more as needed. Serve.
Entrée: Sunflower-Crusted Chicken with Caramelized Onions over Fresh Spinach
- 1 lb thin-sliced chicken breast
- 1 cup shelled sunflower seeds
- 1 medium onion
- 2 tbsp olive oil
- 2 tbsp low-sodium soy sauce
- ¼ cup vegetable oil
- 4 tbsp butter
- ¼ cup chicken broth
- 2 tbsp orange marmalade
- 1 cup orange juice
- Juice of ½ lemon
- Black pepper
- 2 tbsp Wondra® flour
- ½ bag rinsed fresh spinach
- ¼ tsp salt
Trim any excess fat from chicken. Cover chicken with plastic wrap and lightly
tenderize with a mallet. Cut breasts in half and set on a plate. Put sunflower
seeds in food processor and blend until fine. Do not over grind. Place sunflower
mixture on plate. Coat both sides of the chicken with the sunflower mixture. Place
coated chicken on a clean plate, cover, and set aside. Clean up the chicken area.
Peel the onion and cut into thin strips (julienne style). Place a 12” non stick sauté
pan over medium high heat and add olive oil and onions. Cook onions until they
begin to look clear then add soy sauce. Mix until the onions are caramel color,
then place into a bowl and set aside. Rinse the sauté pan and place over mediumhigh heat. Add vegetable oil and allow oil to get hot—about 3-4 minutes. Place
chicken in hot pan and cook each side until golden. Place cooked chicken on
paper-toweled plate to absorb excess oil. Place a small pot over medium heat and
add butter, chicken broth, and marmalade. Stir until butter is melted and mixture
begins to bubble. Lower heat and add orange and lemon juices. Add a pinch of
pepper. Let mixture come to boil, lower heat and stir in Wondra® flour to thicken.
Add flour one tablespoon at a time. Once thickened, cover and turn off heat.
Mix the spinach and onions in a bowl and add salt and a pinch of pepper. Place
mixture on a serving platter. Arrange chicken over spinach and drizzle a generous
amount of orange sauce over chicken and spinach. Leave some sauce on the side
for those who like more. Ooh, it sounds so good!
