MAIN DISH / BEEF Cast Iron Skillet Rib-eye Contributed by William Shaw Executive Director Athinoula A. Martinos Center Ingredients Rib-eye Steaks (1/person; 1"-1.25" thick) Garlic Salt (to taste) Salt (to taste) Pepper (to taste) Butter (2 tablespoons) Optional: Onions (1/2 yellow Vidalia onion/steak) Method 1. Heat cast iron skillet over high flame. Melt butter. 2. Place rib-eye in skillet Cook to desired temperature. Note: for an average size cut (about 1" thick) cook three to five minutes on the first side and two to four minutes after flipping. IMPORTANT: let rest for at least five minutes after removing from skillet. My sons both really enjoy steak and actually will sit down long enough to have dinner together as a family. Keep it simple with just garlic salt or salt and pepper; also excellent with sautéed onions. 34
