spicy sweet potato casserole
ingredients:
4 large sweet potatoes
4 stemmed deviened peppers (anahiem peppers or jalapenos depending on amount of spice you like)
5 Tbs brown sugar
cilantro (can be eliminated-some people don’t like cilantro)
juice from 1 lime, ½ tsp lime zest
1 cup walmuts
3 Tbs butter
vanilla
directions:
rinse then bake sweet potatoes. when soft, cool off then take the peels off. put meat of the sweet potatoes in bowl. add 2 chopped peppers, 2 Tbs briwn sygar, cilantro, lime juice and zest. mix then put in a casserole dish. bake covered 20 minutes at 350 degrees.
while casserole is baking melt butter over medium heat, add brown sugar, walnuts, remaining chopped peppers, and splash of vanilla. this will form a caramel consistency. remove from heat.
take the sweet potato casserole out, uncover, top with candied walnut/pepper caramel concoction on top.
bake again for 15 minutes.
