Umami mania

Japanese cooks created the chicken katsu curry around the turn of the twentieth century.
Twenty-first century Sevenoaks students love it. So our kitchen serves up lashings of it – once a week, enough chicken, sticky rice and kimchi to feed hundreds of hungry young souls.
