Levy Restaurants was founded in 1978 by brothers Larry and Mark Levy . Since then , the catering and hospitality service has grown and has become Chelsea Football Club ’ s official food service partner , responsible for catering across all its venues .
At the tasting session , Graham Tooke , head chef for Levy Restaurants at Chelsea FC , served up three canapés .
What you have created today ? “ Across all of our sites , we are trying to reduce the amount of red meats that we are using . Instead , we are trying to introduce more plant-based ingredients and dishes . So , for our selection of canapés , we have gone for plant based , from a smoked carrot luxe to a pearl onion tarte tatin . Our selection of canapés is good for vegans and for people who want to move away from red meats , or meat in general .”
What is your food ethos ? “ The culture that we have and the ethos that we try to follow with our food , is that we try to use sustainable foods , seasonal foods , foods that help to reduce food milage . We are looking at trying to source more locally and using more UK-based ingredients , rather than air mile and air freight ingredients .”
