“ We are also actively reducing our food miles by stocking more British products and by using locally sourced ingredients to reinvest in local businesses and communities . We have introduced three kitchen gardens at our properties with more in development , working towards a ‘ seed to plate ’ ethos where we can grow core menu items within a stone ’ s throw of the kitchen ,” says Nicol .

“ Sustainability is one of our six core values and is part of everyday life for each team member at The Belfry ,” says Chris Eigelaar , resort general manager at The Belfry .
To improve its environmental impact , Eigelaar reveals that The Belfry regularly reviews its operations to understand its current carbon footprint so that “ areas for improvement can be identified and actions can be taken .”
In addition to this , The Belfry has a dedicated ‘ Earth Matters ’ team . The in-house team includes members from all hotel departments , who meet every month to “ review , agree and communicate on projects that can reduce the impact our business has on the planet ,” explains Eigelaar . The Belfry have received ECOSmart Silver status , an industry standard accreditation awarded to hotels and venues that demonstrate an eco-friendly approach .
“ We have partnered with Carbon Credentials , who are helping us to make changes to conserve energy ,” says Eigelaar . In 2020 , The Belfry introduced the position of ‘ energy co-ordinator ’ to drive forward its Carbon Credentials project , as well as energy-based duties . “ Our energy co-ordinator Chris Evans
has been instrumental in the implementation of ongoing projects and is continuing to identify new opportunities across the resort ,” adds Eigelaar .
The Belfry have also partnered with ACM , a full-service waste and recycling operator , to implement realistic goals for its waste management . “ We have a plastic bailer to recycle plastic waste in the hotel and we have purchased shredders for the office

departments which is then composted on site . As a site , we send 0 % of our waste to landfill with 95 % being recycled further down the process . In the last month we have recycled 13 tonnes of cardboard , which equates to saving 234 trees ,” says Eigelaar
A key feature of the resort is its golf course and , therefore , it has implemented a ‘ Waste to Water system ’. “ Our 70 + greenkeeping machines are washed down in a ‘ closed loop system ’ and the water is then treated and recycled on site . All water from the hotel , once purified , is recycled onto the golf courses . Water is pumped from our plant to the 16 lakes we have across our three golf courses . This water is then used to irrigate all 54 golf holes , around 500 acres , and any surplus is stored in our reservoir for future use ,” reveals Eigelaar .
At De Vere and The Belfry , it ’ s clear that sustainability is engrained not only in the fabric of the venues , but also in the team . CN
