KHP LLC Students Enjoy a Healthy Snack Demonstration
Students in the Kinesiology and Health Promotion
Living Learning Community (KHP LLC) enjoyed a
healthy snack demonstration in their residence hall thanks
to a collaborative effort. The event was organized by a
doctoral student majoring in Health Promotion in the KHP
department (Jenn McMullen, advised by Dr. Mindy Ickes);
the University Health Services nutritionist (Emily Waits)
and intern (Ashley Vazquez); and the KHP LLC graduate
assistant program director (Ben Montemayor) and faculty
director (Dr. Lindsay Kipp).
McMullen brought supplies for healthy snacks (funded
by the KHP LLC) to the kitchen/lounge area in Ingels Hall,
home of KHP LLC students. Snacks included guacamole
with chips and veggies; salad with garbanzo beans,
pepperoni, and homemade dressing; stuffed mushrooms;
and a yogurt parfait with granola and bananas. McMullen,
Waits and Vazquez taught the group of 20 LLC students
about aspects of healthy eating and demonstrated basic
cooking skills. Students participated in making the healthy
snacks by chopping ingredients and mixing them together,
and everyone enjoyed eating the snacks they helped make.
McMullen is planning to do a healthy cooking intervention
for her dissertation with several living learning communities.
Ultimately, she is interested in promoting healthy attitudes,
behavior and self-efficacy with cooking and nutrition among
college students.
