Here is a summer salad recipe that was submitted online from one of our readers , Kris Gradert !
Ingredients : Directions :
2 cans whole kernel corn , drained 1 / 2 green pepper , chopped 1 / 2 red pepper , chopped 1 / 2 onion , chopped 1 cup shredded cheddar cheese 1 cup mayonnaise 5 oz Chili Cheese Fritos , crushed into smaller pieces
Mix the first 6 ingredients and chill . Add Fritos just before serving . Can use 1 whole green pepper instead of red pepper . Can also use Miracle Whip instead of mayonnaise .
