Basic cooking chorizo sausage
Keep this sausage in the freezer and then cook as you need it. You can either boil in a casserole or slice onto a pizza, only make sure it is cooked completely. You can also bake it slowly in the oven, or hot smoke- which is really lovely. It also works well on the barbecue.
• 1 Kg pork shoulder
• 200 g back fat
• 500 ml cider or white wine
• 25 g curing salt
• 20 g paprika
• 6 crushed garlic cloves
• 10 g crushed cumin seeds
• 5 g crushed oregano
You will also need 2 metres of sheep casing
Place the sheep casings into cold water to soak about 90 minutes before you need them. Change the water every 15 minutes.
Pop the meat in the freezer for 20 minutes to chill and then keep refrigerated all through the process.
If you are using a grinder with metal tubes, chill them too. The cooler you can keep the meat the better.
Chill the cider / wine to as close to freezing as you can get it. The same goes for the back fat.
Cut the fat into 0.5 cm cubes and return to the fridge. Mince the meat coarsely.
Mix all the ingredients and stuff into the sheep casings.
Link the sausages at 25 cm intervals and tie off. Freeze straight away or use asap.
Chorizo sausage and bean casserole
This is really easy, incredibly tasty and can be cooked almost in any way. You can add anything you like to the dish that takes your fancy, add cheese, meat, anything really.
Serves 3-4
• 150 g haricot beans per person( you can use any beans, or even chick peas)
• About 200 g finely chopped tomatoes
• Around 500 g chorizo sausage, chopped into small pieces
• An onion
• 2- 3 garlic cloves, crushed- more if you like
• Salt and pepper to taste
• 350 ml passata
It is tremendous with some olives added.
Boil up the haricot beans until tender.
Sweat the finely chopped onion and garlic in a little olive oil then mix all the ingredients into an oven proof dish. Bake in the oven( or cook in a pan on the cooker) for 30 minutes at 200 C.
Serve with diced potatoes or rice.
