Eggs Anytime Nutritious, Affordable, Versatile

Baked Eggs & Italian Bison Meatballs
Ingredients:
1 lb( 454 g) ground bison or ground beef 1 / 4 cup( 60 mL) yellow or white onion, finely minced 3 – 4 garlic cloves minced fine or 1 Tbsp( 15 mL) garlic powder 1 tsp( 5 mL) dried oregano 1 tsp( 5 mL) dried basil 1 / 4 tsp( 1 mL) black pepper 3 / 4 tsp( 4 mL) salt 1 large egg 2 Tbsp( 30 mL) milk, 1 % m. f. 1 / 4 cup( 60 mL) breadcrumbs 1 / 4 cup( 60 mL) olive oil for frying
Step two: 1 jar( 14 ounces) store bought marinara sauce or 2 cups( 500 mL) homemade sauce 1 / 2 cup( 125 mL) water or beef stock 4-6 large eggs pinch salt and pepper 1 / 4 cup( 60 mL) fresh grated Parmesan cheese fresh basil for garnish
Instructions:
1. Preheat oven to 4250F( 2200C). 2. Mix all meatball ingredients in a giant bowl, mix until combined. Portion into 1 ounce balls.
3. Heat cast iron pan or deep oven-safe skillet on stove top to medium. Add 1 / 4 cup olive oil. Add meatballs, sear on all sides until golden brown around 8-10 minutes.
4. Add marinara sauce, water or stock, mix gently, cover and simmer on low. Add Parmesan cheese on top.
5. Make 4 – 6 holes in the sauce, crack each egg into a hole. Season eggs with pinch salt and pepper. Place pan in oven uncovered for 10-15 minutes or until eggs reach desired consistency. Remove from oven and garnish with fresh chopped basil.
Serve with bannock, bread or a wild and white rice combo or any pasta!
