Colleen( pictured below), has upped the ante for dining at the Forks with plates rooted in local imaginative cooking. Partners Tristan Schneider and Hayden Fellner’ s( chef) passion for sourcing local ingredients translates into ultra fresh mozzarella and burrata cheese made in house from“ yesterday’ s milk”. The glistening dairy pillow sits simply on premium olive oil, with a smattering of salt flakes and mushroom accenting subtly. An airy loaf of golden focaccia completes the divine pairing. It doesn’ t stop there, though. Regional ingredients, noted at the bottom of a succinct menu, are heralded as essential VIPs to sustainable eating. As a longstanding champion of the eating local movement( this magazine launched to define and promote Manitoba Regional Cuisine, MRC) we love seeing more obsessive locavores enter the dining scene.
