RECIPE INSPIRATION
As the bar manager at Albert St Cocktail Co, Mike is charged with
crafting, mixing, and shaking up creative cocktail concoctions.
The inspiration for this holiday sipper was Guzman Riestra, a new
import dry Spanish cider. This complex libation is a light spin on
holiday flavour, blending the cider with apple brandy, cardamom,
and a complementary hit of herby chartreuse. Spice laced olives,
a recipe created by former chef Matt Ramsay, are a popular
pairing at the bar.

Guzman Riestra sidra natural is
available at private wine stores. If
Yellow Chartreuse isn't available, 3
parts Green Chartreuse mixed with 1
part honey will suffice in a pinch.
INGREDIENTS
1 green cardamom pod
2/3 oz Calvados
2/3 oz Cachaca
1/4 oz Yellow Chartreuse
1/2 oz simple syrup*
1 oz lemon juice
2 oz Guzman Riestra sidra natural
1 slice Granny Smith apple
METHOD
1. Gently muddle cardamom pod in
the bottom of a cocktail shaker.
The pod should be broken open,
but the seeds not ground to
powder.
2. Add all other ingredients. Fill
shaker with ice. Shake and strain
into a chilled cocktail glass.
Garnish rim with a slice of Granny
Smith apple.
Yield 1 drink
* to make simple syrup, mix equal
parts sugar and water and heat
until sugar is dissolved.
