Kashke bademjan follows with a richer expression of the cuisine, blending smoky eggplant with fermented whey and aromatic spices into a creamy dip whose earthy complexity lingers long after the first taste. Persian cuisine reveals its greatest depth in khoresh, the slow-simmered stews that define its comforting heart.
