Classic dishes, such as the widely copied Spicy Mango prawns and Mango Tango roll, remain showstoppers, proving their enduring appeal. Stunning sashimi, branded new school, is treated with care: premium tuna, salmon, and yellowtail are lightly seared and finished with a subtle soy-ginger dressing, sesame, and green onions, resulting in delicate bites that almost melt in the mouth.
Hot dishes continue to impress. Seared scallops arrive with edamame, corn, and asparagus swimming in dashi broth, while roasted broccoli offers rich umami flavours enhanced by truffle corn sauce and crisp garlic crumbs. Each bite masterfully delivers exciting balance of texture and tastes.
The kitchen is equally fastidious with a smattering of western inspired entrées. Miso-infused sablefish is served with buttered kombu potatoes and a half rack of lamb is accompanied by zucchini, yam purée, and a hint of jalapeño glaze. Each dish balances bold flavor with refinement.
Signature rolls, brimming with succulent oceanic bites and wildly imaginative, demonstrate the kitchen’ s competitive edge. Foie gras and seared tuna are combined with fuji apple, truffle sauce, and microgreens, while the Bobbymar Roll blends Canadian lobster, tempura shrimp and red tuna with mango and black tobiko.
