LBD Chocolate Sauce
A good chocolate sauce is like an all purpose little black dress , that never fails to impress . Everyone should have one they love . This bittersweet sauce is the perfect contrast to sweet ice cream , but also works on a tablespoon as a sly indulgence straight from the fridge . Use good quality chocolate and cocoa powder . You ’ ll appreciate the difference in this intensely dark and flavorful chocolate sauce . In place of the corn syrup , you can use agave nectar , rice syrup .
INGREDIENTS 1 cup water 1 / 2 cup sugar 1 / 8 tsp salt 1 / 2 cup light corn syrup 1 cinnamon stick 1 1 / 2 tsp vanilla 3 / 4 cup unsweetened cocoa powder , preferably Dutch-processed 2 ounces bittersweet or semisweet chocolate , finely chopped
METHOD 1 . In a medium saucepan , whisk together the water , sugar , corn syrup , cocoa powder and cinnamon stick 2 . Warm the mixture over medium heat , whisking frequently . 3 . Once it just begins to boil , remove from heat and stir in the chopped chocolate until melted . 4 . Let cool and then add vanilla
Serving : Let chocolate sauce stand for a few hours before serving , which will give it time to thicken a bit .
Storage : Store in a covered container in the refrigerator for up to 10 days . Rewarm before serving .
