ciao! cooks the spice of life A line up of spices creates complex flavour profiles in these Indian dishes

There ' s nothing like the rich aromas and profusion of spices that fill the kitchen while simmering a traditional Indian meal. While these dishes would be categorized as curries for their saucy texture, the name is actually a misnomer based on an anglicization of the Tamil word " kari ", meaning " sauce ". Far from prepackaged packets of curry powder, these recipes use a bespoke blend of fragrant, piquant, warm, and peppery spices to create a unique flavour profile. We invited chefs Nitin from East India Company and Kumar from India Palace to spice up the Ciao! kitchen.
