In a bowl, lightly mix together figs, apples and pears with the caster sugar and set to the side.
Stack your filo by laying one sheet of pastry onto a large sheet of greaseproof paper and brushing all over with melted
butter, then place another sheet on top and brush again. Repeat with all 4 layers.
Strain the fruit mixture, add a pinch of cinnamon and lay down the centre of the pastry. Brush the edges of the pastry
with water all the way around then roll ensuring the ends are folded in and the roll is tight, use the greaseproof paper to
help.
Carefully lift to a greased baking tray, gently rolling again if it becomes loose. Nip all the way along the top with scissors,
brush with melted butter and sprinkle with caster sugar. Bake at 190C/Gas 5 for approx. 40-45 or until golden brown.
