To make the croquettes; In a bowl, cream together chestnuts, cranberries and Blacksticks Blue and form into
2 or 3 balls. Roll in the flour to coat, then roll in the egg to coat and finally roll in the breadcrumbs to coat.
Then simply deep fry until golden.
To make the smoked steak; Rub the smoked salt on to steak and leave for 10-15 minutes while the salt melts
into the meat. Cook on a chargrill to your customer’s liking.
