50 g sabayon sauce

Slice off the stems and halve or quarter the strawberries
lengthwise, depending on size, into a bowl.
Sabayon sauce (0.5 l)
Ingredients:
5 eggs
85 g Cointreau liqueur
175 g sugar
4 g lemon juice

Directions:
Separate egg whites and egg yolks. Beat the yolks and sugar
together in a heatproof bowl until thick and pale, add lemon rind
and liqueur. Pour the mixture into a double saucepan or stand the
bowl over a saucepan of simmering water. Cook until thick and
creamy, whisking all the time. Add lemon juice. When thick,
foamy, and tripled in volume, remove from heat. Put in the
