Pairing When you’re pairing wine and food, the simplest rule of thumb is to match the weight of the wine with the weight of the food. Think of categories, like light, medium and full when it comes to the body or fullness of a dish. The flavours, ingredients, and how it is cooked can all come into play. Match like with like for simple pairing. For instance, salads are generally light (pair with Pinot Grigio, Sauvignon Blanc), pastas are medium (select Pinot Noir, Chardonnay) and most red meat is full-bodied (choose Cabernet Sauvignon). This iconic wine comes from a region that is among the most extraordinary on the planet – the southern tip of Africa where two oceans (the warm Indian and the cold Atlantic) join. Vibrant and full of life, this wine is great over a light dinner and hanging with your besties. And the best part – you can sip and share knowing that Two Oceans wines supports the Southern African Sustainable Seafood Initiative (SASSI), working to improve conservation of over exploited marine life in the oceans. It also carries the seal of sustainability, which guarantees the wine has production integrity, right from the grapes in the vineyard to the bottle. FETZER PINOT GRIGIO California This Pinot Grigio will hit the spot and have you feeling good inside and out. With smooth, subtle and floral aromas, it is a real crowd pleaser – perfect to keep on hand for last minute entertaining. You can feel good serving it, because Fetzer is committed to being green! At the winery, they harness the power of the sun, protect natural resources, save energy and love the earth. 100% of energy used in their operations is from renewable energy sources, and the winery building is made almost exclusively of recycled materials. Sip and be proud! Wine Parties When it comes to hosting guests this summer (and you know you will), remember the five easy steps to tasting wine: Sight, Swirl, Smell, Sip & Savour. Think of a theme for the party that will involve and engage your guests, and tailor your wines to suit. Maybe it’s a region you’re dying to visit and explore, or maybe it’s a particular grape like Malbec, that has an old world spirit with a modern charm. As I close out my first wine style article, I’ll leave you with one last four letter word – time. Take time this summer to live life, have fun, make unforgettable memories and drink great wine with close friends while making new ones. We are all so busy crossing off to-do lists and getting to the next agenda item, that we’ve forgotten the importance of giving ourselves time to chill, relax and unwind. We only get to live it once, so make it count this Summer and make wine your accessory in appreciating the moment. Sip longer, smell deeper and smile longer. Celebrate Summer 2013 with style and class. And if there is one five letter word you need to know, it’s Pinot!
