Put some water into a large pot, add a bit of salt and bring to a boil. Wash tomatoes, green onions & arugula. Cut cherry tomatoes into two or four, & mince the green part of your onions (save the white part for later). Put pasta into boiling water. Once pasta are cooked, transfer them into a serving plate with a pasta spoon or pasta tong. Use this method rather than draining, that way some water stays on the pasta and you will not need to add a lot of oil to prevent them from being sticky. Pour a trickle of olive oil on the pasta, add some pepper & stir. Place arugula, tomatoes & green onion on the pasta. Serve right away.
Then every one is free to season pasta to their taste (nutritional yeast, vegan parmesan cheese, fresh herbs - oregano, basil, parsley etc. ) or eat them the way they are.
