Rich fruit cake with Liberty Field's Porter's Perfection Vodka
B
ased on Lydgate Street in Poundbury, the family run
Angel Cake Company lovingly make all-manner
of scrumptious cakes. Here’s the Angel Cake
Company’s rich fruit cake with Liberty Field’s Porter's
Perfection Vodka.
RICH FRUIT CAKE
Takes approx. 5 hours, plus overnight soaking and feeding
SERVES 20-25
Ingredients:
750g mixed raisins and sultanas
200g ready-to-eat dried apricots, chopped
100g dried cranberries
100g glacé cherries, rinsed and chopped
2 oranges, zested, + 1 juiced
150ml Liberty Field's Porter's Perfection vodka (or brandy,
sweet sherry or Marsala) - plus extra for feeding
325g unsalted softened butter, plus extra for greasing
225g light muscovado sugar
100g golden caster sugar
4 large eggs
300g plain flour
75g ground almonds
100g almonds, finely chopped
1/2 tsp bicarbonate of soda
1 tsp cinnamon, 1 tsp ground ginger, 1/4 tsp nutmeg
1 tbsp golden syrup
Method:
1. In a medium glass or plastic bowl, mix together the dried
fruit, orange zest and juice and Porter's Perfection. Cover with
clingfilm and leave in a cool place to soak for at least 12 hours.
2. Heat your oven to 140°C/120°C fan/gas mark 1. Grease and
line 9" (23cm) round cake tin making sure you have a double

Poundbury’s very own Angel Cake Company is celebrating after its lemon drizzle
cake was crowned champion in the sweet bakery class at the prestigious Taste of the
West Product Awards lunch.
T
he cake was up against Gold Taste of the West winners
across all six counties, which make up the Taste of the
West area.
The Judges said about the family-run business: “Looks
stunning! It’s almost theatrical looking and it really does
taste as good as it looks: a fabulous cake! The flavours of both the cake
and the icing are beautiful. Lemon is clearly fresh lemon, the tanginess of
which helps cut through the layers and the icing…. Full marks on taste!”
Nicci Campbell who founded Angel Cake Company with her mother
Pauline in 2007, said: “My sister Emma and I are delighted to see our
lemon drizzle cake awarded this top accolade and it is particularly fitting
to have received the award in the year of our 10th anniversary.”
Emma added: “We actually have a combined experience making
celebration cakes of 40 years - in fact Nicci started winning awards for
her cakes when she was a young teenager – and with more and more
people becoming involved in this competitive sector it is great to know
that our cakes still go on winning top awards.”
Based on Lydgate Street, the Angel Cake Company has taken a new and
exciting direction in “dedicating their time to spend on what they do best
- making cakes”.
This has involved a renewed focus on making beautiful bespoke
wedding, corporate and celebration cakes as well as organising and
holding popular cake making workshops to pass on skills.

layer and that the sides are well above the top of your tin.
3. Cream together the butter and sugars with an electric
whisk until light and fluffy followed by the eggs, one at a
time. Combine the dry ingredients - flour, ground almonds,
bicarbonate of soda, mixed spice and ground ginger and fold
into the butter mixture. Then add the syrup and chopped
almonds to the soaked fruit, then fold into the mixture.
4. Spoon it into the baking tin and bake on the bottom shelf
of the oven for 4-4 1/2 hours, until the top is a golden brown
and a skewer comes out clean.
5. Cool on a rack, then remove from the tin. Use a skewer to
pierce the top of the cake all over and carefully spoon over
approx. 2 tbsp of Liberty's Porter, allowing it to soak into
your cake.
6. Store your cake in two layers of fresh baking parchment,
then in foil. Do not allow the foil to touch your cake directly
as it will taint the flavour. Feed it with alcohol every two
weeks (up to three times before Christmas). Don’t over soak
it or it will go soggy. If you wish to marzipan and ice, stop
feeding it one week before hand. It will keep for up to three
months if stored in an airtight tin in a cool, dark place.
