Smoked Salmon
Triangles
Smoked salmon and herb-speckled
cream cheese are simply made
for each other. This classic combo
creates colourful appetizers that will
disappear fast!
cup Spreadable Cream Cheese
cup Chopped Fresh Parsley
tbsp Chopped Fresh Dill
tbsp. Lemon Juice
tsp. Grated Lemon Zest
tsp. Pepper
Pumpernickel Cocktail Bread Slices
Smoked Salmon Slices
(about 8 oz.), larger ones halved
Parsley (or Dill) Sprigs
Coarsely Ground Black Pepper, for Garnish
Combine first 6 ingredients in small bowl.
Spread over bread slices. Cut slices in half
diagonally.
Roll 1 slice of salmon into cone shape. Place,
seam-side down, on 1 bread half. Place 1
parsley sprig inside cone. Repeat with remaining
salmon slices, bread halves and parsley sprigs.
Sprinkle with pepper. Makes 32 triangles.
Tip: When a recipe calls for grated zest and
juice, it’s easier to grate the fruit first, then juice
it. Be careful not to grate down to the pith (white
part of the peel), which is bitter and best
avoided.
