Your cakes are stunning edible sculptures. What are your favourite tools for creating sculpted cakes?
I love my Clairella airbrush( which I use on all my cakes) and also all my Sugarflair dusts. I have one lucky knife tool I couldn’ t live without also.
Who are your cake idols?
I have soooo many! A lot I am lucky enough to call good friends now. I think it’ s not just big names I look up to – it’ s also smaller pages who push themselves trying out new tools and ideas. You see their work and gasp as it’ s so beautiful.
What are your long-term goals for Kaykes?
I’ m now mostly teaching students to sculpt and airbrush. I’ d love to travel the world meeting new cakers and to develop myself as an artist.
What are your top tips for creating realistic-looking designs?
My best tip would be make what excites you. Always print as many pictures as you can of all different views of the project you are making to get the most realistic copy possible.
Have you ever had a cake disaster?
OOHHHHHH YES. I think the best is a 4ft by 3ft cake of a mosque for a young boy. I hadn’ t measured the door so we had to take it out the studio window. We managed to get it in the van, but then we opened the door of the studio and BOOM! The whole window smashed! It was a very cold evening waiting for a gentleman to come and help board it up.
Do you have a favourite cake that you have created?
I really like the chimp I created for the Sugar Carnival at Cake International a couple of months ago. He has his own little personality!
You have a young family- how do you balance your time between your children and your cakes?
I’ m very lucky- my four children are young( the oldest is 10) so they have grown up with me caking away till late. They fully enjoy cakes and seeing what can be made. I’ m also lucky that my partner is hands-on and helps a lot when I have large cakes to finish.
Do you have any advice for decorators starting out in the cake industry?

My best advice would be- don’ t give up, EVER! Cakes, once you have them in your blood, you will never escape. It’ s a love / hate relationship with cakes – one day you will want to sell all your tools and give up, and then you wake up the next day with a fab idea for your next cake. Also, always follow your heart and find the style that YOU love- it drives you forward.
