slightly rough edges (you can use a
slightly larger nozzle if needed). Place
the roof under a desk lamp for at
least 1 hour then leave in a warm, dry
place to dry overnight. This should
make it easy to remove from the
cellophane and cocktail stick.

Use a small, cranked palette
knife to lift the curved fillets
off the cellophane. Pipe a line of stiff
royal icing 7mm (¼”) in from each
corner using a no. 2 nozzle, then
place the fillet in place so that it sits
vertically. Use an artists’ brush to
neaten the edge. When all 6 pieces
are in place and in the right position,
pipe running beads along the bottom
edge. This neatens up the edge and
also gives it extra strength.

Use the same bag of
icing to pipe a line along
2 adjacent sides of the hexagonal
base (smaller hexagon). Pipe a line
of icing along the right-hand side
of 1 side panel, pick up a second
panel and press the 2 side pieces
