Which technique do you wish you saw
more of in cake decorating and why?
Royal icing whether it’s piped as a
decorative border or tube embroidery
it always adds further interest and
shows creative skills. It’s so versatile
and can be adapted to complement
your chosen design.
What is your favourite medium to use
in cake decorating and why?
This is a very hard to answer as it
really depends on what I am making
and the effects that I want to create. If
I must give an answer, I think it would
be Mexican paste, as this can be
worked into so many decorative items
and is very versatile, with cutting,
modelling and constructing
