Do you experiment with unique flavours
in your kitchen?
Yes I recently invented a salted caramel
with a salted caramel ganache at the
request of a special bride and groom.
Work out your value per hour. Charge
what it takes to do it. If you are taking
a little longer than an experienced
decorator you need to take this into
account. You can’t charge for your
inexperience, put that down to a good
learning opportunity and you will get
faster the more practice you get.
