If you desire, you may swirl toffee in a circular
motion around the balloon. Here are some
variations in toffee baskets.
The toffee will set, then
gently break away toffee
that has attached the
bowl.
Pull out the balloon, and
using scissors make
a little snip next to the
balloon knot. Allow the
water to pour out of the
balloon and shrink away
from the nest.

Secure your cake to the
board with buttercream. Add ½ cup of hot water
to ½ cup of sugar in a
heatproof bowl. Mix with
a pastry brush and paint
the sugar syrup over the
cake. Spread buttercream the
top of the cake and then
place the second eight-
inch cake on top. Paint the top of the cake
with sugar syrup.
