Do you have any advice for decorators wanting to try their hand at sculpted cakes ?
I ’ d say the biggest hurdles are starting the first cake , and the fear of wasting materials . Lose both of those . Plan on ruining a lot of cake and fondant and chocolate by trying things . Think of all the disciplines and crafts in the world , and how much people invest in an education to learn how to master them , then see these materials as your investment in your education . Make things you will never show anyone . We tend to think of cake as precious and that everything we do with it should be worthy of selling or posting . Drop that thought . Your fear of getting it wrong holds you back . You will get it wrong until you get it right , and you will murder a lot of cake and fondant in the process . Commit to do that . Then sign up for one of my classes or go to my website and get my tutorials !
Do you have any plans to return to Australia in 2017 / 2018 ?
As of this writing , I have no dates on the books to visit my beloved Oz . I do hope to get there as soon as possible . It ’ s always worth looking at my calendar to see if I ’ ve posted any dates ! Until then , I will have to survive on the videos my dear friend Greg Cleary sends me of magpies and Kookaburras and opossums and all the lovely creatures that show up on the deck of his beautiful home .
