With a Pumpkin
In all the excitement of Halloween it can be very
easy to buy too many pumpkins. Lauren Sourbutts
suggest some recipes to use up that orange mush.
PUMPKIN CHEESECAKE
‘Never trust someone who doesn’t love cheesecake’ is a good philosophy to live by, and gives you
even more reason to turn all of your leftover pumpkin into a delicious cheese-based dessert.
PUMPKIN BREAD
Making bread tends to involve a lot of time kneading and waiting around for yeast, but pumpkin
bread is made in a similar way to a cake and requires no effort beyond mixing the ingredients
together and shoving that loaf tin in the oven.
PUMPKIN SOUP
This dish is a firm favourite because of its simplicity and will warm you up well before you go
out dressed as a zombie/pirate/ghost/all of the previous. All you need to do is blend together
your ingredients, heat them up and then eat them. Done. If you fancy something a little more
sophisticated try out Buzz’s Thai pumpkin and coconut soup.
FUDGE
Probably the most difficult recipe here – you need a sugar thermometer for this and not too many
people already own one of them, but get it right and the end result is definitely worth the effort.
ROASTED PUMPKIN SEEDS
After making these dishes you’re going to have a lot of pumpkin seeds left over. You can just cover
them in some sugar, cinnamon and nutmeg then roast for 50 minutes and eat away until you can no
longer stand to look at another pumpkin.
