We enjoyed dinner in the new Woodlock Brasserie where we found are a range of unique menus created by awardwinning Executive Head Chef, Ciaran Cunningham. It offers ample proof that fine dining is possible in a lively, inviting and relaxed atmosphere.
Ciaran is introducing new ideas to the hotel and exploring rare culinary techniques which include curing his own gravalax in a light treacle marinade to give Atlantic salmon truly mouthwatering flavours.
Another approach involves dryaging his beef inhouse for 28 days. To create an even more succulent cut, Ciaran steams it in a vapogrill and infuse it with wild garlic and garden herbs.
