Logistics are always more complicated when dealing with a temperaturesensitive product like fresh gelato : major ice cream makers use factories and cold transport systems that rely on preservatives , but a fresh product that customers are willing to pay more for is harder to transport . The Lopresti brothers fashioned a kit production system employing raw ingredients and gelato machines to cut down on waste and give franchisees an edge over other gelato shops .
