A Piece of Personal Knowledge
Most of us have struggled through the years with trying to get our hard boiled eggs to peel
easily. Don’t you just hate it when that stubborn shell refuses to let go? It is so nice when it
does, but did you know that there is really no such thing as a hard boiled egg?
According to a Better Homes and Gardens New Cook Book, eggs are either soft-cooked, or
hard-cooked, not boiled. I tried their recipe for hard-cooked eggs and I do believe they must
be on to something.

“Place eggs in saucepan and cover with cold water (at least 1 inch above eggs); rapidly bring
to a boil, at once reduce heat to keep water just below simmering. Cover; cook eggs 15 to 20
minutes. Cool at once in cold water—this helps prevent dark surface on yolk and makes for
easier peeling.” I believe the steaming helped to release that thin skin between the egg and
the shell. Hey, It Worked!
