A Side Dish

Today, 12/10/2017, I decided to try an experiment. It had to do with one of my favorite snacks that’s hard to make. Cheese and Rice.

You might say, “That’s Easy”. It really isn’t. If you want to make the right cheese sauce. Yes, sure, you can just melt some fake cheese and pour it over instant rice. But, that’s not the right way to do it. If you love your food, like I do, you need to work for it.

Good food is a labor of love. You must take the proper time and the proper ingredients to make something that makes you say; “That’s almost better than sex”.

So, I got this idea. Not just plain old Cheese and Rice. I wanted something more to it. Something that would knock my socks off and be substantial. So, the following recipe was born.

Read on to see how far down the rabbit hole I went for this.

Grocery List

1 Cup Long Grain White Rice

1lb (.45kg) Sirloin steak, Sliced Thin

1 White Onion, Coarsely Chopped

3 Large Jalapenos, Sliced Thin

4 Cloves of Garlic, Minced

1 8oz Can Diced Tomatoes, Drained

1 Package of Frozen Broccoli and Cauliflower, Steamed

1 Packet of Fajita Seasoning Mix

2 Cups of Whole Milk

4Tbs Flour

4Tbs Unsalted Butter

1Tbs Olive Oil

3 Cups of Shredded Cheese, I used Cheddar/Jack mixture

Preparation

Rice

Bring 1 ¾ cups of water to a boil and add in 1 cup of rice. Allow to return to a boil and stir once. Reduce heat, cover, and simmer for 16 to 18 minutes, or until all the water is gone. Turn off the heat and let steam for 10 minutes. Place in a bowl and set aside.

Steak

Prepare as instructed on the Fajita seasoning packet, except, drain the excess sauce. Place in a bowl and set aside.

Method

In a large pot, melt the butter over medium heat. Add in the garlic and sauté for 1 minute. Add in the onions and sauté until onions are translucent, but firm. Add in the sliced jalapeno and sauté for 2 minutes.

Stir in 4Tbs of flour, keep stirring. While still stirring, add in 2 cups of milk, stirring constantly.

Add in 3 cups of cheese, folding in and stirring constantly. When the cheese has melted, add in the cooked steak, diced tomatoes, rice, and steamed vegetables and combine. Allow it to simmer, but not boil, for 5 minutes. Turn off the heat and cover. Allow to rest for 5 minutes.

Spoon out the mixture into a bowl and…….
