As a chef, I often encounter clients affected by food allergens and health conditions that require them to eat restricted diets. It almost appears that every food has something that they are not allowed to have. Unfortunately, the holidays bring a set of unavoidable frustrations people with restricted diets during a time beset with travelling, attending parties, and hosting meals for family and friends. They often face the challenge of participating in festivities while hurdling their dietary limitations. My challenge is to take away those limitations so they are able to eat, drink, and be joyful.

This joy is especially true when we think of spirits and desserts. To be truthful, the desserts are not very difficult, but the wines were way outside of my realm of expertise. The more questions I received, the less I found I really knew about choosing wines that were friendly to vegetarian, vegan, or gluten- free diets. I had to do extensive research to gain the expertise that was crucial for my providing answers for clients. The sacrifice was worth the hours I spent at ABC Fine Wines and Spirits with their sales associates- tasting and asking questions to complete this article.

I gained a plethora of knowledge during my field trip. First, I learned that all wines are essentially gluten-free. Whew! Second, I was surprised to learn that many wine brands, particularly their reds, are not vegetarian or vegan friendly. The processes used to clear red wines of sediments often include animal products, such as gelatin or egg whites. Third, I learned about biodynamic wines which utilize a spiritual-ecological approach to winemaking that is believed, though not proven, to provide a spiritually holistic benefit with the most authentic flavor for those who drink it.
