Quick chicken curry Method 1. Heat the oil in a large pot and then add the onion and ginger and garlic paste. 2. When the onion is brown, add the curry powder. Stir well and cook on medium heat for two minutes. 3. Add the chicken to the pan and mix well. Cook on medium heat for 8-10 minutes until the chicken browns. 4. Pour the coconut milk into the pan and add the stock cubes, stirring well. 5. Bring to the boil then reduce to low heat, cover with lid and simmer gently for 10 minutes. 6. Add salt to taste and then serve.
